Crockpot Thai Chicken

Prep Time: 10-15 minutes

Servings: 6

Ingredients:

  • 2.5lb Chicken Pieces (we like to use chicken thighs from The Happy Hog Farm)

    Sauce Ingredients:

  • 1 cup Salsa

  • 1/4 cup Nut Nutter (we use Natural Peanut Butter)

  • 2 TBSP Lime Juice

  • 1TBSP Soy Sauce

  • 1tsp minced fresh Ginger

    Garnish:

  • 1/2 cup nuts, chopped (we used peanuts)

  • Fresh Cilantro, chopped

Serve over rice if desired.

Edamame is a great veggie side as well.

Directions:

Place Chicken in the crockpot.

Mix together sauce ingredients and pour over the chicken.

Cover and cook on LOW for 8 to 9 hours or HIGH for 3 to 4 hours or until done.

Serve over rice if desired and garnish with nuts or cilantro.
